I pickle them and they are best of all the long green things that get pickled. A great snap but still tender. I buy big bags from the farmers market every year and do up a couple dozen jars.

Good way my wife does rare tuna is make mashed potatoes mashed with wasabe to taste. Great with seared tuna

No sauce. Buttered noodles, sliced sun-dried tomatoes, mushrooms, garlic, shallot, Pecorino Romano freshly grated on top, salt n pepper with a quick spray of grapeseed oil. Wow! Flavour. No presentation points, but come on, the hockey game is on.
