What's For Dessert Tonight?

First crack at butter tarts today, they’re good, but not runny enough, needs improvement.

Also, some non traditional Scottish coconut tarts. These have been a Christmas staple in my family for at least 3 (now 4) generations. We usually have a healthy stockpile of raspberry jam on the shelf, but apparently we’re out! Only blackberries in the freezer, so this year its blackberry coconut tarts.

We were in the OK in September and a friend gave me a box of Macintosh apples. I took them home and peeled and cored them and ended up with 50 cups of apple slices. I then mixed cinnamon, butter, nutmeg, sugar and cornstarch with 7+- cups of apples and froze in bags (7).

When we feel like a pie we purchase a frozen pie shell and thaw a bag of apple mix, fill the pie shell and top with the other shell and a sprinkle of sugar on top. Bake for 1.5 hrs.
