Messy coming off the grill, but cheeks, frame, collars, fins, and bellies off Thursday''s white springs. Mirin, soya, sushi vinegar, sesame oil, ginger, bit of brown sugar marinade. Had it again tonight and there is still lots left. I cut them with more meat than I would when taking fillets to the processor.

Chatted with the fellow who owns the Water Buffalo farm here yesterday.
He suggested that he and his Lady actually prefer the Top Sirloins over any other cut.
So, I decided to give them a whirl...
