That looks amazing, @rivergal for me, calamari and I never got along. My first sort of real gig outside being a ****** ski instructor was at a restaurant called pizzamania on the north shore. I had to clean and prep the squid and my hads were bleached black for weeks after. Needless to say, the whole experience left a mark on me haha

I only had a couple of ink mishaps 😂
 
I did those chicken lollipops tonight with Lee Kum Kee marinade and sesame oil, 24 hour soak. The dry rub/spice versions are juicier and more tender. I think the soy sauce in the marinade cooks the protein a bit plus the sugar burns a tad and makes them firmer. Still tasty, looking great, but I prefer the other prep method.

Lamb pinwheel roast. Deboned and butterflied a leg roast, then spread the stuffing of feta, spinach, onions, garlic, marjoram and sage. Rolled up and tied, seared in the cast iron then air fryer mode in the oven to give the outer bark/inner tender that we love. Rest, untie and slice.
