What's for dinner tonight ?

Well I finally got around to putting a few jalapeño cheddar links on the smoker. They have been on for about 2 hours. Internals are at 137. The ironwood is running between 167 and 171. Was planning getting them up to 155 160ish. They do have cure in the mix. Good boat snacks. 20221224_224218.jpg

Didn't cook much last night because we were at my moms place and she's a control freak. But my wife whipped up this dip with about a dozen dungees worth of crab meat. We shell and freeze any leftover crab when we get it and save it for this dish. Restaurants would lose their shirts serving this thing. It's only a 6x12 pan.20221224_161616.jpg

Christmas Dinner calls for stuffed Pheasant!
Slow roasted in the Clay Baker of course!

The gravlax was awesome so I did some more but went for an extra six hours in the cure:

Fortunately we have more bagels haha....what's everyone doing for NYE dinner? I'm going to smoke an 8lb prime rib with apple about 6 hours then sear it off. Rather my wife is but she doesn't know that yet haha!
