What's for dinner tonight ?

Looks fantastic Nog, where do you get all the pheasant from? I've never tried it.

I have a really good Buddy on the mainland who hunts them.
We work out trades from time to time.
Was just over there collecting a new-to-me SUV and we did just that.
Still have a couple stashed.

You are really missing out not having tried them!
The Lady & I often lived off of them when attending school in Southern Alberta.
Nothing finer!

Good to hear. This new to us sport of hunting has provided a lot of firsts in the past two years. Perhaps pheasant will eventually be one of them.
 
Pulled them at 200. Little taste then foil wrapped rested after. Unreal

Alot of hard fat which can't do much about on this cut of ribs, however the rest of the fat rendered really nice, meat is fall apart. Meat pulled in and accordianed itself. Right off the bone almost. Not bad for a test subject

Planning to slice like brisket and put on a some sliced sourdough with a little Texas BBQ sauce
