What's for dinner tonight ?

Rack of Lamb with home made pasta & sauce (Chanterelle based) with spare gooses & a great Merlot:

No "gamey taste" whatsoever.

You guys sure eat a lot of Lamb. Do you farm source it or do you buy from Costco or? Is it similar to venison for strength of game flavour? Only ever had it once at a Greek restaurant.

Dude you cook great looking food and only had Lamb once? What the hell is going on. I don't find lamb gamey, similar to venison probably but even a bit less.

Lol I know right I'm gonna buy some. I feel stupid now 🙃

I can't imagine that you're not following the cuts of meat on sale thread
Lol I do but embarrassingly I've scrolled past any lamb posts 😕

Lamb is great. Mutton is nasty - had it in Arizona on the Navaho reservation
I wonder if it was Mutton that I had that the restaurant called Lamb cause it wasn't great.

I would take a properly prepared cut of lamb over beef any day . The most commonly prepared red meat in our household .
What is your favorite way of preparing/cooking it?

Seeing we are talking lamb, and all those great meals on this thread, I had to add mine.

BBQ Rack of lamb asparagus, sweet potato and added a Greek salad and glasses of Merlot. Got the idea

I got the idea! 🙂 That looks delicious. Is that your favorite way to prepare/cook it?

Do you guys look for certain qualities of the Lamb meat when choosing quality cuts? Like for beef we look for nice marbling for example. I notice Lamb is quite lean looking so is there any other things I should look for?

I use lamb chops for my richer tomato sauce. Otherwise I'm a huge fan of a rack cut into popsicles and seared super quick on the charcoal with lots of salt. Whole racks marinate well with rosemary and garlic. Mint sauce is pretty classic. I bet one would cook up real nice in your pizza oven.

Right on. I will try that.

I sometimes add a little mayo to make it a little thicker
Thank you!
Don't forget slow braised shanks in some kinda red wine sauce. We had a friend that owned lambs on a hobby farm for a while, so we bought a couple lamb packages off him the way some people buy a side of beef or whatever. Ground lamb is good stuff too, great for meat balls or Mediterranean type meals.
Now I'm getting excited. Im a big fan of slow braised meat on the bone.

the local butcher in Parksville has in the Pass usually has Cowichan valley lamb :)
I'll be checking them out thank you.

Lots of good lamb recipes from everyone but if you like slow roast meat on the bone lamb do not forget about Arni Psito
Slow roasted Greek lamb shoulder somewhat akin to pot roast with all the classic greek flavours and pretty much foolproof
And much cheaper than the higher class cuts of lamb
Lots of good recipes out there
