Rack of Lamb with home made pasta & sauce (Chanterelle based) with spare gooses & a great Merlot:

You guys sure eat a lot of Lamb. Do you farm source it or do you buy from Costco or? Is it similar to venison for strength of game flavour? Only ever had it once at a Greek restaurant.

What is your favorite way of preparing/cooking it?I would take a properly prepared cut of lamb over beef any day . The most commonly prepared red meat in our household .

BBQ Rack of lamb asparagus, sweet potato and added a Greek salad and glasses of Merlot. Got the idea

I use lamb chops for my richer tomato sauce. Otherwise I'm a huge fan of a rack cut into popsicles and seared super quick on the charcoal with lots of salt. Whole racks marinate well with rosemary and garlic. Mint sauce is pretty classic. I bet one would cook up real nice in your pizza oven.Lol I know right I'm gonna buy some now. I feel stupid now

Do you guys look for certain qualities of the Lamb meat when choosing quality cuts? Like for beef we look for nice marbling for example. I notice Lamb is quite lean looking so is there any other things I should look for?
