Left-over moose sirloin turned into a fine stew:

In Vancouver last week I picked up two bags of onions for $2 each. Now what to do with them.
French Onion Soup, topped with Rye bead crumb and Swiss cheese.
Ended up with 8 bowls.

Half or so depending on size sautéd with breakfast every morning, omelettes, hash of multiple types, in borscht and veggie stock
Best flavour adder beside garlic
Health benefits are numerous from killing parasites to fighting inflammation and too many to list and low calorie too
Onions are obviously marvellous
 
Lasagna and Strawberry Cheesecake for dessert.

  • 1 lb (450 g) ground beef
  • 1 lb (450 g) Italian sausage
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 cans (24 oz each) marinara or tomato sauce
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt & pepper, to taste
  • 16 oz (450 g) ricotta cheese
  • 8 oz (225 g) cream cheese, softened
  • 1 cup sour cream
  • 1 large egg
  • ½ cup grated Parmesan
  • 2 tbsp fresh parsley, chopped
  • 12 lasagna noodles (cooked according to package)
  • 3 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese (extra for topping)

Instructions​

  1. Make the Meat Sauce: In a large skillet, cook beef, sausage, and onion over medium heat until browned. Drain excess fat. Add garlic, marinara sauce, tomato paste, Italian seasoning, red pepper flakes, salt, and pepper. Simmer on low for 20 minutes, stirring occasionally.
  2. Prepare the Cheese Mixture: In a bowl, combine ricotta, cream cheese, sour cream, egg, Parmesan, and parsley. Mix until smooth and creamy.
  3. Assemble the Lasagna: Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish. Spread a thin layer of meat sauce on the bottom. Add a layer of noodles, then spread a layer of cheese mixture, followed by meat sauce, and a sprinkle of mozzarella. Repeat layers until ingredients are used, finishing with noodles, meat sauce, and mozzarella on top.
  4. Bake: Cover with foil and bake for 30 minutes. Remove foil and bake another 20–25 minutes until golden and bubbly. Let rest 10–15 minutes before slicing

Triple A full packer beef brisket. Forgot to get pics when I carved it up. The Traeger smoker does amazing briskets.

This 13 pounder took 16 hrs to be done.😲

Served with roasted veggies with olive oil, butter, Rosemary, Sage, and Thyme, homemade sweet (my bees honey) cornbread, and homemade deep fried potatoe balls (mashed potatoe, butter, sour cream, chives, aged white chedder cheese, bacon crumble, Parmigiano Regiano, roasted garlic, sea, fresh cracked black pepper rolled into balls and deep fried). Forgot pics of potatoe balls.
