Stuffed Spaghetti Squash

Half and hollow a spaghetti squash and toss into the oven at 375 degrees

While that is roasting mix up your stuffing. In this case moose burger, mushrooms, onions, red peppers, fresh tomatoes, spinach and cheese sauce and a shot of salsa

When the squash is cooked, run a fork over the contents to free up the spaghetti

Then add in some stuffing and cover with shredded cheese

Back in the oven until the cheese is nicely melted

Serve up with your favorite red - in this case Merlot of course.

Tried doing some more coho medallions tonight, with a quick lesson learned. Don’t use a small coho, it’s quite a bit of work to roll them in shape as they fight back. Plus the small bones are a bit of work to get out. The last ones I did were better than this, but it’s still fun with food.

Made up an olive oil based marinade for Lamb Racks last night.
Used our own garlic, oregano, rosemary and marjoram.
Add a dash of lemon and it was most excellent!

Fired up the Blackstone 22 griddle I got from the
LastChanceWholesale Store. 85$ including taxes, needed a good reseasoning. Costco return crap, 99% junk but the odd gem.

bacon potato fry cooked by my father in law who used to run a dinner in Maple Creek Sk and my wife’s salad.

Anyone have good fish recipes for grills?

Family BBQ for 12 people. Fresh salmon from last weekend. I made half mayo/lemon/ dill and half brown sugar/ soy/ garlic. Salmon was cook perfectly and everyone enjoyed.

Halibut with a roasted garlic, mayo and Parmesan spread under the broiler for a few minutes. Garden carrots and salt crust warbas on the side.

I told my wife we need to eat more halibut and she agreed. So I’m just assuming that that means she’s pre-approved more fishing trips.
