I go to 125 too, but sometimes I find it a little overdone by the time I sear it. I was thinking about shooting for a little less next time. Or staying further from the bone with my probe. Yours looks perfect.Smoke on low till 125f and then finish on the grill.

How long in the marinade before cooking is more the question I was looking for.actually it's the chicken marinade and sesame oil I have shown on here before. Time and temp are above. Check it at 9 minutes, thickest part, if convection oven.
