I made XL triangle spanakopita’s today. I usually make up a dozen every month and freeze them.
With them being Xl, it only takes two to fill me up for a lunch or dinner.
Filo, spinach, sautéed onion and garlic, feta and spices. They turned out great and nice and flaky and great tasting filling.
BUT, I screwed up and forgot the feta in the mix. I guess with this batch I will cook them and then cut them in four and top with a sprinkle of feta on top.
They are actually pretty good with out feta.
