It is Schiacciata bread (was pretty easy to make) burrata, pistachio cream and mortadella. Will be making again.

In fact it ranks right up there with the best of the Best Mountain Sheep I have ever had!

Quaffed down with an excellent Merlot under my Lady's overly ambitious B-Day decorations.

1/2C PACKED MINT LEAVES

1/2C PACKED BASIL LEAVES

1/2C EVOO

1/4C WHITE WINE VINEGAR

2T LEMON JUICE

2T SUGAR

1 TSP SALT

PUREE IN FOOD PROCESSOR

No Pic but I pan fried a Pacific Cod a couple of days ago. Just coated in flour and Back Eddy spice. It was absolutely delicious and my first Pacific Cod of size since being out here.(10yrs). Wish I could get them on a regular bases. For me I would take it over salmon or Hali any day of week but I know they are not for everyone.
