-Brisket from freezer
-used this rub
B4ADBCB5-36B0-480D-98B6-7B714BFB6CCB.jpeg

- 3hrs @ 225
- crank heat to 250 and spritz every half hour with a 50/50 apple cider vinegar and apple juice mix
- wrap at 160 butcher paper
- off at 203
- rest till 180 then wrapped in a towel and into a cooler for half hour

I never seem to follow the same thing every time I do a brisket . This one turned out good . Beauty smoke ring and nice bark but the flat was a little dry. Sometimes hard to avoid . All in all was damn good. Brisket for a few days now haha

Finally getting around to checking out that massive steer I cut up for the Ladz.
Yep, that is our full sized meat platter:

Turned out a perfect hedging on the side of rare from medium rare.
Forgot pix after that one, but suffice it to say it was downright delicious!

Cheers,

Made a couple batches of moose meat lasagna using the hunter chef recipe book, added some chanterelles as well as a frozen peanut butter pie with chocolate ganache dressing. I've forgotten how much work making a good lasagna is but at least I have two more in the freezer to enjoy at a later date.

Pick up a 2" thick Rib eye and oysters yesterday for our football game appetizer (for me) and a steak dinner.
Both went well with a bottle of Merlot.
I had a rain check from Thrifty for the oysters, which expired yesterday so I picked up 48 for $.50 each.
Excellent deal for PEI Malpeques oysters.
