Gardening pics, hacks, successes, and or failures

Finally did a batch of chili's in oil. I'm fully convinced I'll get botulism from these after reading 10 000 different recipes. It's a mix of vinegar based, oil preserved and hot water bathed canning. I'll probably end up freezing them all too. The internet sucks.

I don’t acidify my tomato sauce, I pressure can it for 40 mins at 10 pounds. This is not an official safe canning recipe, however tomato and zucchini non acidify there is an official recipe for pressure canning that is 40 mins.

My concern with these is they're in oil. Everything with pressure canning said no oil. But I do add a bit to my salmon anyway.
 
My wife is making me go to Europe. So even though if it doesn't frost tonight the next IMG_20241002_161448864.jpg 14 days look good, it's time to put some stuff to bed over the next couple days.
First time growing these things. Next year I'll feed the big pot more and start with fewer slips to maybe get some bigger ones.

Nice work! Sweet potatoes aren’t the easiest thing to tackle. This’ll be my second year and I can tell I’m in for a pitiful harvest.
 
Did you measure the pH?
Nope. I looked at testers and then went down the rabbit hole of how inaccurate they would be anyway. The peppers soaked in vinegar for 24 hours. And then i covered in oil and boiled them. I would hope nothing survived that. Otherwise all of Italy would be dead by now
 
Just got back to town and it looks like my sweet red peppers are ready for a final picking. First time I have grown them and they turned out great and not hot but nice and sweet and have a great color.

Do you have the package or verity
 
These buggers are tricky, but this was a good one.

Thoes look great never know the season will be long enough
