What's for dinner tonight ?

Trying out a new crab cake method. Prawn meat glue binder. Deep fried to set with fine panko then warmed in the oven to serve. View attachment 123287
Can confirm now that these were a hit. I used 4 ounces of prawn meat per lb of crab. These 10 cakes were 2lbs of crab meat or about a 1/2 cup each. The crab was light and the added flavour of the prawn was nice. No heavy filler ruining the crab experience. I approximately used (no recipe):
2 lb crab meat
8 oz prawns with 1/4 heavy cream whipped up into a paste.
4 tablespoons mayo
2 stalks finely diced celery &
1 small shallot
1/4 cup each parsley and chives
Tabespoon Old bay
Teaspoon Worcestershire
Teaspoon White pepper
Formed into patties and coated in fine panko.
Froze for an hour and then fried for colour and crust.
Heated in the oven at 400 until internal temp came up to 145.
Served with a herb and lemon Aioli.

First pizza not to bad. This is dough from root cellar as I didn't have time to make mine and let it ferment for a few days. Will try some more this weekend.

I think.if you look back about 8 years or so I'm pretty sure I posted my seafood cakes 😁

It was a bit of a fluke I found it worked so well cause I had a bunch of different seafood to make into cakes and chopped the prawns and shrimp up really fine and tossed it all together with the other ingredients and it all held together so well.

I also like panko mixed with cake flour and some corn starch for a really nice light crunchy coating.
 
Brined the Turkey for 24 hrs in water brown sugar, coarse salt, oranges, lemons, herbs and spices.

Stuffing is made with Nova Scotia Summer Savory. My ladies family recipe. Was delicious.

Mashed potatoes with cream cheese, sour cream, chives, herbs and spices.

Steamed then roasted mixed veggies with herbs and spices, lemon, olive oil and butter.

Roasting the Turkey over top of veggies, garlic, mushrooms, butter, olive oil, gizzards, turkey neck, herbs and spices. Herb compound butter under the skin on the breasts. Turkey is basted with melted herb compound butter. Sprinkled the skin with salt, pepper and poultry seasoning then into the oven.

Gravy is made from all the juices of the roasted veggies, mushrooms, Turkey drippings etc from the Turkey roasting pan 🤩

With a nice Reisling/Gewurztraminer wine.

Pineapple cream and special coffees for dessert.

New bbq day is always a good day. I’m excited to try this thing out. It’s propane, but has a pellet smoker. And convection fan and digital temperature controls. There’s a cold smoke mode too which I’m pumped to try

Geez that’s a nice unit, all the bells and whistles on that one.
 
Made 4 different pizzas last night. Experimenting with different ingredients and 4 different mozzarella cheeses.

Our favorite was one with all 4 mozzarella, sautéed red pepper, sautéed green pepper, sautéed mushroom, double smoked bacon, Thrifties grainy mustard sausage pre crumbled and sautéed, pepperoni, honey ham, mild and hot capicola. 20251227_201116.jpg
