I'm cold smoking some Porcini mushrooms today for wild mushroom Risotto and also making a batch of cream of wild mushroom soup today.

Mushroom overload lol :)

Hit a patch of some real beauty culinary and medicinal shrooms yesterday.

Fresh killed last night.

Whitetail heart and tenderloin with home grown garlic and onions and of course home grown mashed potatoes with butter along with steamed corn. Everything on the plate and menu from our own land.

Nice. Pretty cool that you can harvest/grow all that on your own property.
 
7 lb prime rib...1/4 cup unsalted butter with pepper and herbs d Provence. Oven at 500 for 35 minutes and then turned it off for 2 hours. Would have been bang on medium rare but had to sit for 35 mins. Anyway the bark was fantastic as was the roast.

Safeway had a sale last week at 11.99 / lb and I picked up 3 x 8 lb so merry Christmas to me haha

I don't always do the roast this way but I trust my wall oven and will do this again for sure. Too lazy to break out the rotisserie.

But seriously, we do one with a mix of yogurt and sour cream. Sometimes avocado in there. Sometimes no cream and with tomatillos. Love green sauces.
