Fresh killed last night.
Whitetail heart and tenderloin with home grown garlic and onions and of course home grown mashed potatoes with butter along with steamed corn. Everything on the plate and menu from our own land.

Looks perfect for my liking.7 lb prime rib...1/4 cup unsalted butter with pepper and herbs d Provence. Oven at 500 for 35 minutes and then turned it off for 2 hours. Would have been bang on medium rare but had to sit for 35 mins. Anyway the bark was fantastic as was the roast.
Safeway had a sale last week at 11.99 / lb and I picked up 3 x 8 lb so merry Christmas to me haha
I don't always do the roast this way but I trust my wall oven and will do this again for sure. Too lazy to break out the rotisserie.
