Drink's fishing Partner OJ did this up for us on a Goldie trip some years back as appee .. Thought i would revist it for dinner the other night.. Just a good as the first time i tried it
OJ’s Sesame Crusted Salmon Sate's.
18 6'" bamboo skewers
1 12oz salmon fillet
1/4 cup oyster sauce
2 Tbsp orange juice concentrate
1 Tbsp soy sauce
1 clove garlic minced
1Tbsp grated fresh ginger
3 Tbsp chili paste ( OJ used Sambal Oelek at Nootka)
1/4 cup honey
1 Tbsp sesame oil
2-3 Tbsp Toasted sesame seeds
Presoak bamboo skewers for at least 30 minutes. Slice salmon into strips. Weave the strips onto the skewers.
In a bowl, combine all ingredients and brush half the marinade onto the salmon skewers. Let stand for at least 10 minutes.
Grill for 1 to 2 minutes on each side. Brush remaining marinade on the cooked salmon and sprinkle with toasted sesame seeds.
