Wow. Have missed a couple weeks of looking at this thread and every time I check it out I'm drooling with all the amazing home cooked meals with healthy whole foods for ingredients that everyone is using.
It probably sounds sappy but it makes me proud to be a sportsman harvesting and cooking my own food and that I can share that passion with like minded folks like you here that share the same interests.
Screw the fast paced life of fake food and pre made meals!!

Man we are getting a lot of snow today!
Thought it would be a great day to shovel a bunch of snow, then have some nice wine and make a good snowy winters day meal.
Just looked around to see what I had on hand. Came up with some organically raised local farm raised chicken and some other goodies to make a self foraged Pine Mushroom, Porchini Mushroom, smokey Dijon mustard lemon cream sauce slow simmered winter stew. Home made chicken broth and a nice pinot grigio for the base. With sautéed onion, home grown garlic, red pepper, the mushrooms, and fresh thyme. Sautéed low and slow with some added fresh squeezed lemon juice and smokey Dijon mustard added to the sauce. Towards the last hour of simmering I add heavy cream and a homemade rue to thicken the sauce.
Making this meal I noticed I have maybe only one meal left to make from the dehydrated Porchini and Pine mushrooms I picked last season. So note to self; keep more next season!! Lol
