Mmm the wife and I love spring rolls. For a Ukrainian girl my wife is an excellent Thai food cook. Well she’s an excellent cook all around but she makes awesome Thai food.

This was a hit as part of a small Japanese dinner 120th birthday party we threw for my buddy and me. (Both born on the same day and year).

Classic Recipe for Japanese Braised Pork Belly (Buta No Kakuni)

Buta no kakuni, or Japanese braised pork belly, is a classic dish packed with umami. The pork is slow cooked with soy sauce, mirin, sake, and sugar.

So we tried it with some frozen brisket, cut into squares.
I simmered for 3 hours and reduced it to almost syrup at the end.
Served on boiled then fried with slivered cabbage and onions straight ramen noodles. Roasted veg on the side.

Wasn’t sure where to post this one,, in the “Goose Breast Recipe” post or this one.

Meat loaf made with half and half ground Canada Goose breast and the local farm raised hog we bought this fall. Rice Pilaf with marinaded Japanese salad.

Bacon and apple stuffed pork loin roast with an apple jelly/Dijon mustard glaze cooked in the charcoal kettle.

Stacked Parmesan potatoes with a sour cream and thyme sauce.

Tortilla soup. Super easy in the slow cooker and nice and thick. Topped wirh sour cream, cheese, cilantro, avacado and of course more tortillas!

Albacore Crudo. Ponzu, yuzu kosho, sesame oil , seranno, cilantro , crispy shallots . Served on fried rice paper sheets . The same sheets you would soak and use for rolling salad rolls, a few seconds in hot oil and they fry up into the perfect vessel for this kind of dish.

Baked oysters my take, I chop up the oysters into bite size pieces lay into a sprayed shell. Sautee chopped up mushrooms and red onion then whatever greens be it spinach or beet tops or tonight the last of the kale in garden, then top it with a mayo i make with lemon juice,ponzu and a bit of sugar to sweeten then bake till it gets a little golden on top. Main is whitetail burger with homemade buns and homemade zucchini relish the wife makes super yummy
