At The End of the Day

as I'm reading this I've got 24 jars of smoked I did yesterday in the canner, with 20 in the next batch. 21 packs of hali vac packed for the freezer. and the bellies and collars still smoking for a treat later

The recipe I got from the recipe section of the forum(I believe BRS) will check later-and I used a demarrera sugar and scotch whisky wash. Pretty tasty. PS The scotch was some crap called Grants which I got down the states in a thirsty moment for 17 bucks for 3/4 gallon. It is by far the worst scotch I have ever had the misfortune to drink-but!! as a salmon wash-Not Bad!!
 
Good to hear you could salvage the bad scotch... =:D ..think I pulled that reciepe already & was thinking of giving it a try this fall..nice on the fish collars I usually BQ them & call them fish wings also very good :)
 
The recipe was indeed from here but credit where credit is due -it was theBig Guys recipe for Indian candy not BRS as I first thought-collars and fins is standard smoked fish recipe with scotch wash.
 
Got a load of pinks in the Big Chief right now-----by 8pm they should be done.... but no collars for me-- too valuable for crab bait!!!

Last batch I did some chunks with a Thai sweet chili sauce coating. I like it but my wife prefers the maple syrup instead...
 
Wifey says my ocean roaming is over for this year-What a year!! Glad to hear you guys are doing well at the Kitty hump-guess that's as far as I get from now on. She ( who must be obeyed) has decided she wants to catch a fish -so on the first nice day I guess I'll be hump-bound. Give me a wave(with the hand)-my crew might get seasick otherwise!!! God grant that she doesn't catch anything over 321/2 lbs-my best this year or I'll never see the WCVI again!!!
