Our go to rainy day breakfast, 1 egg easy over, shredded hashbrowns, bacon and my favorite, extra crunchy peanut butter on toast.

The quest for the perfect COVID 19 inspired sourdough continues.
Water, flour, salt, starter. Pennies per loaf if you're retired and already tied 2000 flies, walked the dog, and flipped your compost, so time is free.

Derby posted up my peanut butter toast just needs a banana.
We were at Safeway and bananas were $1.50 us lb (in Canada $.65) and papayas were on sale for $1.29 us lb so I bought 5.
I tried papaya on peanut butter toast this morning and it was great and even better than bananas. But it looks like yams on PBT
I think we will be having a few more PPBT over the next few weeks.

Life Is tough when you have to substitute papayas for bananas, eh!

This one came from a random short video rabbit hole.
Pour the eggs into the hot pan, push the bun down into the still soft eggs, let it cook, reverse the whole thing onto a plate, add some smoked cheese and the last of the fresh garden tomatoes that were green when we cleaned up the garden to one side, then flip one side onto the other.

It was a Mexican Breakfast this morning. Scrambled eggs with peppers, bacon, cheese, and Pico de Gallo wrapped in a Burrito. With a side of mashed fresh avocado.

We love fresh Pico de Gallo (fresh salsa) and it’s mix of fresh vegs and hot peppers.

But the translation (Pico de Gallo) is strange, I think it translates into Beak of Rooster. Better not ask for Pico de Gallo in Mexico or you might get rooster beaks.
