DEEP FRY RECIPE

I had a great and easy deep fry recipe for bottom fish, but since my move, I have misplaced it.
I was wondering if any of you have it and can share ?
It was very simple and all I can remember is you had to place it in the fridge for an hour or so before use , familiar to any one ?

Catching lots of walleye and perch here and it was a great recipe for deep frying them
 
I’ll vouch for wolfs recipe.I started with it about a decade ago and still use it as a starting point. I sometimes toss in a pinch of cumin, always loads of fresh dill, and any liquid is always pickle juice.
 
When I lived in Saskatchewan everyone bought Shore Lunch batter at the store. Keep it in the boat. Catch a few walleye then pull up on the bank start a fire and fry them up. It was awesome and easy.

What does the pickle juice do ?
Or does the vinegar help with the crispiness or something ?
