Cuts of meat on sale

My dad used to own and operate a finishing feed lot before I was born and we raised cattle growing up. He was absolutely adamant to get the butchers to hang as long as possible. So, seems to be too much anecdotes in this thread, must be something to it....
 
Think I read on the Sterling beef that safeway and thriftys offers, it aged for a minimum of 21 days. So it's a grade of AAA selected from the top 10 percent of Canada AAA

Yup. Have bought beef from all over BC and Alberta. Triple A's... including smaller farm raised grass fed grain finished Angus etc.. I always end up going back to Thrifties for the Sterling AAA. I've been posting about their meat on this forum for probably 10 years or so. It's very consistently tender and great flavor and marbling.

But note that at times Thrifties may run out of Sterling supply and they will use other suppliers at those rare times. The butchers there have told me that after I bought some steaks from the butcher counter once (not in Sterling labeled packs) and they weren't as good as usual. So now every time I go there If I'm buying un packaged/labeled meat from the butcher counter I make sure to ask if it's Sterling.
Especially around holiday sale events they can run out of Sterling AAA
 
My Sterling AAA roast is aged and butchered. Cut two steaks out of the far chuck end and was left with a nice 4 bone roast. I removed the ribs, seasoned and re-tied the bones on the opposite side to protect the rib cap. 24 hours dry brine in the fridge then into the grill tomorrow for a low and slow reverse sear on straight charcoal. Definitely had a lot of trim to deal with, which was expected. I carved out a few chunks and pan fried them for a taste test. Man were they ever beefy. Very concentrated flavor and very tender, not overly blue-cheesy.

Thrifty’s has their January pork leg sale on starting tomorrow, $1.39/lb.
I was there at 7 am lol asked the guy any limits .... nope so i grabbed 10 of them damn good deal after i skined and took bone out a 25 lber got 21 lbs of meat still a very good deal that worked out to 1.61 a lb still very very cheap for pork... 4 are already in brine for hams

Thrifty's has chicken legs on sale and it ends today.
3kg for $11
I purchased three boxes and use it for crab bait. I bag it up into bags which fit perfectly into the crab bait box, then grab a bag and go.
It is great crab bait and at a cheap price. Some how those crab eat the meat down to the bone.

AAA Flat Iron steak at Costco Business centre @24.24/kg

Got a 4piece pack, 3kg (4 complete pieces) for $73.47 ($11.11 per pound)

seared in pan and finished in oven, Family loves it even picky 8 year olds!
 
Costco Business center is WILD!!!

We checked out the place today, first time for a fairly quick visit. Not crazy jam packed like the usual costco run. The ratio of people who drive shopping carts like they do their cars is the same, just less traffic. No crazy good deals but you can get the staples with a better meat and cheese dept. Think i seen a tenderlion for 170 $. For cured Meats and things like that it is wild. Better coffee selection. Anyway that's my report
