My whites are in a brine now. In to the smoker tomorrow.
The whites do not freeze and keep as well as the reds on my opinion. Also some whites seem to be better meat than others.
I had a couple of pieces from freezer that did not make the cut for smoking and are now in the garden.
Absolutely. The difference in some is really noticeable in texture, taste, and smell. I like white chinook a lot but they are not all the same even if the size is similar.
I like coho and mid size springs for candy. I save similar thickness fillets for that. That will be next weeks smoke.
3 batches per year for me. Whites in a dry brine, reds in a wet brine, coho and similar size fillets for candy.
