A Guy I know who's from Trinidad told me that throughout the Caribbean the Salmon of choice is canned Chum-I believe the brand name was White Rose.
Sounds funny to us but look @ the British they eat Dog Fish and call it Rock Salmon.

Don't confuse Dog salmon (Chum) with Dogfish (small shark). I remember reading about a Heavy metal issue with larger Dogfish but have not read the same sbout Chum.
On a similar note, when you steak the salmon there are fatty areas on the sides, back and all of the belly which take away any areas which concentrate contaminants.
