Here is our traditional Finish Christmas day breakfast.
Riisipuuro (Rice Porridge) with Hedelma Soppa (fruit soup).
Two days before Christmas we make the fruit soup with 2 cups of dries fruits like raisins, prunes, apricots, ¼ cup sugar and 1 ¾ Lt water, simmer it down for 2+ hours. Add cornstarch at the end of the simmer to thicken if needed.
Christmas day we make the rice in a double boiler. 1 ½ lt milk and one cup of Arborio rice (Italian rice). Bring it to a boil then simmer for 1.5 hours+- or until liquid is absorbed. You must use Arborio rice.
Top the rice with fruit soup or cinnamon and brown sugar. It more like a dessert than a breakfast.
