They do jump, not very often but the odd one comes 3 feet outta the water, they mostly just use speed, they are ridiculously fast.
 
the only time ive ever caught them was commercially but we dragged weighted jigs on the surface at about 5 knots. I think theyll hit pretty much anything that moves, we'd throw our orange peels and apple cores overboard then pull tuna on board that were spittin out pieces of peels and apple cores. The majority of the time theyll be out of range for most sport boats but we got them off nootka as close in as 20-25 miles. Surface temp. is the biggest factor, look for the warm water 59+ degrees.
 
A Tuna is a bit like a Samoyed when he sees a Squirrel-KILL!!!!!!!!!!!.
Not the smartest fish but great fight and great eating.
