Update:
v.1.0: Ditched the metal design for various reasons mentioned here.
v.2.0: My plastic design, copying an aftermarket solution, actually made the spray worse!!! With it, it blasted the motor, and somehow shot spray into the boat onto me!
v.3.0: Version 3 appears to work! Tested yesterday and all spray was redirected straight back. Nothing was hitting the motor.
Version 3 is made from an inside corner for vinyl gutters. I then cut it up to make a sort of three sided box using a Dremmel. the top edge, and around the part where the wire comes through was siliconed as well (not shown in pic as I did it after). Cut a couple slots for the transducer mounting screws to pop through and pinch it in place.
Still a bit of a tail, but all out the back, not hitting things it shouldn't hit. My Transducer needs some adjusting still also, so going to raise it up a bit more, but at least this stops my motor from getting a bath!
Second photo is while on plane at about 50km/h. You can see the extra spray in the photo (sorta).
