it’s cheaper than having st jeans do it that’s for sure.
five parts demerra sugar one part pickling salt ( 5:1) bit of garlic powder. let it marinade for about 12 -16 hours in fridge over night
in the morning rinse and dry till a pellicle forms.
throw in the smoke for six hours .
easy peasy recipe but everyone loves it.
don’t need to go crazy as the salmon is the main ingredient
It's too bad they shut down the Granville Island Smokery as they actually did a pretty good product; their peppered cold smoke was better than most I have had.
