Stainless steel not the easiest thing to turn down on a hobby lathe then drill and tap, polish

Man, I want this-but my setup is for my tin boat with rails and even with these security bolts in place they can just pop the whole thing off the rail if anything...any ideas for that too and I'll buy it all?
