Salmon collars

Try grilling over charcoal with teriyaki or some other sugary sauce that will caramelize and pick up the smoke flavour.
 
BBQ -sea salt , liberal coarse pepper and squeeze of fresh lemon to finish. Wife and i just polished off a couple from a spring today! To me the collars and bellies are to best parts .
 
Absolutely the best part. Breaks my heart to see people throwing them out at the cleaning table. Now you need to try slow roasting the heads. Magic
