I never heard of bone in strip loins before ?Got some really nice bone-in striploins for $9.99/lb at Country Grocer on Wednesday.

I hadn’t heard of them either, but the marbling was waayyy better than the boneless striploins next to them in the cooler for the same price.cool, something new to me !

They can spend 2 hours in the "danger zone". But add a safety factor to that. They also stay cold enough in the packaging that they don't get into the zone for some time. 3 hours is no problem in my eyes.What's the longest you would consider steaks left at room temperature to be safe? That’s the way to do it! Results in a way more even cook. IMO mandatory with thicker cutsI usually let it sit on the counter hour or two before bbqing anyway
Totally be just fine also a steak if it has any bacterial nastiness is kill off by cooking as its only on they very outside .
