Best fillet knife ?

I agree 100% with the Victorionix butcher knives.

Best purchase I ever made. Bucks up a tyee in a minute. Beautiful fillets.

Great quality knife all around.
 
The rib bones should come off in the same stroke that gets the fillet off ;)

That knife or even better the Victorinox 10in or the 12in Cimeter knife...just watch your fingers and keep them out of the dishwasher... :)
 
A knife is only good if it's sharp.. a more expensive knife holds the edge...

just my 2 cents,I'd buy a $10 knife/spoon,sharpen it, chuck it when done!
 
dexter russell 10" chefs knife for salmon. dexter russell 8" boning knife for halibut. great knives, take a good edge and easy to maintain.
 
The Kershaw Pro Grade 12 inch Scimitar is good value. This knife is long enough and sharp enough to do a one pass filet job on a Tyee. Wipe it with a little cooking oil and it will slide down the backbone with little effort or sawing. High carbon stainless granton blade with a non slip handle and perfect flex for filleting. They come scary sharp and you want to be careful even putting on the edge guard. I got one at the Vancouver Boat Show this year.
