Agreed on the canned Albacore. St Jeans did a few Albacore I dropped off from trips to Westport in 2016-17 and the hot smoked canned was incredible especially in a simple pasta with butter, white wine, garlic, shallots, basil, spinach and cherry tomatoes with a splash of cream.From the other thread on the cost of processing:
Canned albacore is amazing and far better than anything you can buy at the store. Even better is smoked and then canned, everyone we gave some to asked for more. Will definitely be doing more that way going forward.
They also do amazing cold smoked lox.
