White Spring

I never found a flavour difference between red springs and whites. We've come to prize rich orange flesh colour because it's so clearly not farmed fish. I think that's led to an unconscious bias against white springs, you often hear comments like 'only good for smoking'.

My family prefers White springs --especially smoked
