White or Red Springs?

Million thank you for sharing and its good educated. Now I can understand that I can see two big different between red and white. That is very interested. I had never been caught a white king. Maybe in someday I will catch one. I am learning new thing in everyday.

doesn't explain where the "marbled" springs come from?
 
Speaking of "marbles", does anyone have a pic of the marbled flesh? If so, any chance of posting? I've caught many reds and a couple whites, but I've never cut one up that is obviously marbled. Kinda curious as to what it looks like.

I'm imagining swirls of white and red like a marbled cake LOL, but I'm pretty sure that's not the case :)
 
Red for me,
white seems to have higher oil content, I like them better canned or smoked.

I love the whites smoked.. take them off the racks and the oil just drips from them and eveyone says they are the best smoked salmon they have had (rivals sockeye)

A fillet would have white around the outside and closest to the skin and spine, with red down the middle.

I had a retail seafood shop in Steveston years ago and had many locals reserve order white spring in the spring when the fat to flesh ratio was good -great tasting fish!. Some of our late summer whites are not as good.
 
I bonked a big whitey one time, BBQ'd up the two filets for my 40th birthday party. My buddy was cooking it and had one gal come back after she loaded up her plate and said, "Hey, my salmon is all white, it isn't cooked yet, can you put it back on the grill?" LOL As per usual, most non-fishers have no clue there is white salmon and they get turned off by it.
