Which is your favorite fish???

salmon, not fussy

Surprised to see a couple list p cod. Tried it and it kind of grossed me out.
 
For me it is
1. sablefish...Sooke Harbour House does it up awesome
2. halibut..pan fried
3. red springs...candied, smoked and canned, grilled...all good
4. sockeye...canned
 
Salt water
Ling/Halibut
Salmon
Rockfish
Cabezon
Greenling

Freshwater
Burbot/Ling
Walleye
Pike
Bass
Trout
 
Don't care to eat any of the salmon or trout species unless they're smoked. They just taste 'fishy' to me no matter how fresh they are or how they're prepared. Blasphemy, I know but that's the way my taste buds work.

As far as the white fleshed varieties go, fresh water perch tops the list. For fish and chips, it's got to be cod or snapper. Everybody raves about halibut but it's so finicky to cook properly that it mostly winds up overdone and dry unless the cook really knows their stuff.

Everybody has a different set of taste buds - good thing there are so many different species out there.
 
How about shaved clam?
 
Funny that no one has yet mentioned farmed atlantic salmon as their favourite ha ha. Seriously though my favourite is:
1. Ling cod
2. Sole
3. any kind of rockfish
4. Skate (very underrated here in Canada but hugely popular in the UK). Mind you, we Brits eat dogfish too!!
Not particularly keen on halibut or salmon
 
My wife likes to make fishcakes out of ground fishmeat......her fishcakes top my list. Whether they be made out of salmon or whitefish.

other than that:-

(1) Smoked,pickled Chum
(2) Smoked Chinook (the way my wife does it......dry brine (brown sugar/salt/and other things).
(3) Baked Pinks.
(4) Kelp Greenling.
(5) Smallish crispy crunchy pan-fried Cutts or Rainbows (5 to 7 inches) from deep cold lakes. I won't eat trout from any shallow lake....they always taste like a mouthful of mud.
(6) Canned Sockeye.
(7) Battered Ling for fish and chips.
(8) Prawns



I never was all that big a fish-eat nut. I love catching them though.....

question, red vs white springs. I have had very few white springs so am not a good judge, but, do people really notice a difference in taste? I have heard that whites are better for smoking and then I have heard the reverse arguement. What do you guys think?
 
I like em all but,
1. belly side of the lateral line from the front end of a big white spring.
2. sockeye

I do prefer prawns, crab, and most bivalves to fish.
