So today for my BD, the wife pulls out a package of pickerel fillets, plus homemade perogies and fresh broccoli from our garden. I ate a ton it was so good!!!

This of course spurred a conversation on what I like best for fish.

My preference is;

- Snapper (yellow eye)
- Ling and greenling (same family)
- Pickerel
- Sole
- Salmon
- Halibut

What about you folks??? Like Halibut or Pickerel or Salmon as your favorite fish???

Lets stick with Canadian fish, not those caught down in the warm waters.

Cheers

Vermillion Rockfish (Sebastes miniatus)

Halibut

Ling Cod

White Spring Salmon

Grey Cod

I like Walleye too but rarely eat it-it's rare as popeshit here.

Dogbreath-what and how do you prepare vermillion-I've always been told they are tougher to eat than boot leather.

Ill play.........

White fish(never had walleye, but hear it rocks)
1. Ling/yellow eye... any way
1. sole.... wrapping rice, bacon, scallops, and green onion
2. Hali.... any way

Salmon:
1. Winter spring
2. Coho
3. Sockeye(fresh).... can the rest.
4. Chum(and big summer white and red springs).... smoked
5. Pinks......See feeding habits of #2 in the white fish catagory

I hate trout,.... but every clipped steelhead I get is coming home with me :o

Tough one since it really depends on what I'm in the mood for and "just caught" fish always tastes better imho

1-Halibut (only ever caught one so....)
2-Sockeye (loves me some sushi)
3-Pickerel (good trip out to lake of the woods got me onto these)
4-Springs (I don't get many decent/big springs so I'll say they taste better just cause I'm happy to catch one)
5-Lingcod/Greenling (cod dog....mmmmmmmm)

My faves are :

#1- red winter spring
#2- Ling (hardly ever catch them)
#3- Halibut
we don't retain rockfish as the numbers are declining here.

Heres something fresh for #1
1 - black bass (seriously!)
2 - yelloweye
3 - winter spring
4 - halibut
5 - coho
6 - ling
7 - summer spring
8 - sockeye (find it a pain to cook as the meat is so red, its hard to tell the cooked sweet spot!)
9 - rock cod

My faves are:
1 Ling Cod
2 Halibut
3 Pickeral
4 Coho
5 Arctic Char- not from the farm or freshwater
6 Sockeye
7 Spring

Tempura sole
deep fried halibut
lingcod (almost any way)
coho (BBQ!)
sockeye
pink
chinook
chum
rockies
pcod
cabezon

pickerel ?? ( been so long since I had one, I have forgotten what they taste like)

I know it is sacriligious but I have to put steelhead on top as my most favored and the sea bass or whatever theyare called, after that anything goes. Steelhead done up as lox is out of this world.

Calamari- a la plancha (grilled with touch of olive oil/rock salt). No deep fry BS, it’s got to be fresh. If people only knew how good it is fresh and only grilled.
Anchovies- cured in vinegar, garlic and parsley for 24 hours. Great with beer or a nice Burrowing Owl Chardonnay
Halibut- grilled on the BBQ.
Any salmon on the BBQ in tin foil filled with onions/capers (filleted of course), can't deal with bones.
