Seems the ugly turns off a lot of people but I keep any of these that I get over about 2-3 pounds. The smaller ones taste better, like most fish, and the wife loves them. Do them up in beer batter, fish crisp, or just fry them up in butter and sprinkle lemon pepper on 'em.

Reminds me of the fresh water ling cod back in Alberta. Looks like a salamander, tastes like halibut. Ugly can be good, especially when deep fried[8D]

One day I got one off race that was 32 pounds. Thing was ugly. It tasted not bad either. Just an odd texture.

Sorry guys I had to bring this up. Karma-Kazi I don't know if you remember the fish but I think you may have misidentified a ling cod. The record for cabezon is 23lbs, caught in the Juan de Fuca strait. Unless you misidentified, you smashed the record by 9lbs. Are you sure it was not another bottom fish?

I'm not having a go, just curious.
 
Cabezon may be ugly but they taste good. Sometimes their flesh has a blue-green tinge to it as well, but it tastes the same. Just fillet them without cutting into the guts because the female's egg sack also contains a poison. If that gets punctured and on the meat, you could get sick.
