The other day I caught a Red Snapper, not too big, but it died on the ascent so I kept it as my one Rockfish for the day.

While filletting it at home, the knife punctured something and out came a ton of what looked like India Ink......totally jet black.

Never had that happen before.

It got in the meat and the black stain was non-removable.....

What was it?......
 
The knife opened up something in the entrails...yes.....

It was such a mess I didn't bother doing exploratory surgery.....
 
I think it's a bile sack but am not 100%. It's very dark almost a greenish tinge more predominant in rockfish. Avoid cutting it as it ruins the meat it contacts.
