Tips On Canning Beef?

I broke down three briskets today for smoking. The flats were kind of thin so I decided to cube and jar them. Anyone got any hints or tips? I've never done this before. I plan on browning the beef and adding carrots and onions. We do a few different stew types from Vietnamese curry to a more traditional one. So i want to keep it plain so we can decide later.
 
When I use to hunt we would do moose or deer. We cubed the meat added onions, carrots, potato and turnip. Added a sprinkle of flour, whatever spices you liked and put it a mason jar. I didn't have a pressure cooker so we boiled in a standard canner for 3hrs. It made great quick, simple easy meals that I often took to work. Great on those cold winter night shifts.
