Just finished a batch of Nog’s smoked salmon gummy recipe. Got it vacuum sealed and was wanting to express mail a sample from Comox to Burnaby. Will it be ok for three days sealed but not refrigerated?
Thanks:
This time of year, yes. I would throw it in the freezer before shipping though to keep it cold for as long as possible. I actually find smoked salmon is even better after being frozen and thawed.
Not sure of the status of shipping via the bus but when I used to go back and hunt with my Dad in MB we would wait until winter set in on the prairies and he would load up a cooler of cut and wrapped to ship via Greyhound. In the middle of winter not a chance it was thawing and would still be frozen when I got the call to pick it up at the depot.
It is so good that between the time I took it out of smoker until after letting it rest for a day and vacuum sealing it, there was 50 pieces less than I started with. Funny how that works.
