COCONUT CURRY PRAWNS
Recipe-
•oil in a pan
-toast tsp cumin 20 sec
-add 5 garlic/ ginger 1 min
-add 1 med onion/celery slight sweat
-add tsp and a 1/2 tumric, tsp masala or curry powder, chilli powder or paprika toast for 15 sec
-add 1 can coconut milk and any stock, i made prawn shell stock cook for 10 min
-add prawns and cook for 2 min then turn off heat ( touch of lemon )
••SALT TO PUMP THOSE FLAVOURS UP!! •••
-add chopped cilantro/ Thai basil optional, chopped red chillies or chilli flakes
-Serve each bowl separately, coconut curry then pasta on top,
top with prawns and cilantro
Usually served with rice or rice noodles, trying something different with spaghettini pasta for that extra bite and flavour..
