salmon burgers

I was just thinking the same thing Backatit. I look forward to hearing some good recipes.

I don't like salmon steaks, and I have a small family so I don't freeze whole fish so here is what I did last week. They turned out well.
Filet all your fish and your buddy's too so you have enough to do lots. Use a soup spoon to aggressively scrape as much meat as you can from the bones, fin areas and back of head.

In a big bowl, mix with your hands
2 lbs spring/coho scrapings bon't bother chopping/mincing it
3 eggs
1.5 cups bread crumbs or oat meal
1 cup finely chopped onion
1/2 cup chopped parsley
2 tbsp mild chili sauce (or ketchup)
1 tbsp wort. sauce
2 tsp salt
1 tsp pepper

Make patties with wax paper in between.
Freeze in ziplocks in stacks of 2 patties

Barbeque on an oiled grill when just partially thawed or they can fall apart a bit.

Baste with whatever or use my favourite sauce which I use on all salmon:
In a small pot simmer until thickened
1/2 cup butter
1/2 cup brown sugar
1/2 cup say sauce
black pepper
fresh minced ginger or ginger powder to taste

Put the sauce on near the end or the sugar will burn.
 
Had a great salmon burger at the Galley in Oak Bay recently but forgot to get the recipe.
Was hoping to use up some leftovers tonight.
Anyone have an easy recipe.
 
So the GF finds me looking for Salmon Burger recipes and gently says YFI the salmon is already BBQ.
So here is her recipe for Salmon Melts which I highly recommend:
BBQ Salmon flaked bones removed, Dijon, Mayo, bread crumbs, salt, pepper, dash Tabasco, on toasted Whole wheat bun with XXX Old Armstrong Cheddar and Fresh Warshington asparagus, slaw, and tomatoes on the side.
