From what I understand, there is very little difference between the 5.0 and 5.7. I believe they are the same Chevy engine block as they fit into the same footprint. Fuel economy stats are very similar, however to achieve the same speed, the 5.7 does it at lower RPMs so technically doesn't work as hard as the 5.0. In a 23' boat, that wouldn't be a major difference -- but there are a couple of guys on the Striper forum that have swapped the 5.0 for the 5.7 so you might want to read some.
I've got the Mercruiser dual prop system which I believe is a product they licensed from Volvo. The major difference I've noticed is the low speed handling around the docks. The props immediately bite and turn the boat very quickly. I'm able to maneuver the boat easily and turn inside my old 19' Striper. The new Merc prop setup uses a 4 blade inner and 3 blade outer and I have this one now.
