I find with that thing you can just use the polish setting more often and they stay nice and sharp and it doesn't take more than a minute to tune them up.
It's just from a thick stack of multicoloured craft foam from Michael's cut into quarters (or fifths?) with a straightedge and a utility knife lengthwise.
We looked at some nicer cork ones, but this has worked out and held up fine after 20 months in the new kitchen.
