Before you toss your freezer burned salmon, give this a try.
Trim off the really bad freezer burnt bits.
Rinse with tap water and make sure there's no lingering fish slime on the fillet.
Put it in a big ziplock or tupperware, and completely cover it with milk. Lots of milk.
Let it sit for at least 24 hrs in the fridge.
Rinse it off, pat it dry.
Salt n pepper and squeeze lemon juice all over it.
Coat the top of the fillet with regular mayonaise (yes, really). Smear it over all bare meat parts but not the skin.
Bake it till it's just barely cooked in the middle.
I'm eating some right now for lunch and it tastes great.
The protein in the milk binds with the thing that causes the gross fishy smell, but it definitely takes at least 24 hrs to work.
