Fish processing depot - Victoria

Its sad cause they make a great product , I personally stopped using them for my own stuff and do myself now.
I dropped off (25 years ago) 6 beutifully trimmed out fat WHITE springs belly bones removed fins etc vac sealed flat, ALL meat basically it was like over 65 lbs . picked up at outfitters on douglas at the time and here was this tiny box of 18 lbs of indian candy ...... opened it up ohhh look red spring too I phoned right away as I was furious , was told there is alot of loss and shrinkage . I was like cmon not that much and whats with all the red spring in the batch they assumed me it was my fish.... Well needless to say it went no where ........ .

FAS in victoria does custom smoking as well and make a very good product

 
I’m still a regular customer at st Jeans. I dropped off my Fraser opener fish September 2nd and got my lox the last week of November.
The big waits seem to happen when they get the big influxes of First Nations food fish. I’ve been at the Nanaimo store when 3-4 people show up with a big cooler of sockeyes
 
FAS in Victoria has been great for me. Stopped using St jeans a few years ago.
Only downfall for FAS was the 7 month wait time for tuna. Although the product was 10/10
They only bring out there “tuna processing” equipment once or twice a year is what I was told
 
I found driving to St Jeans and poor produce control over the last years was not worth it. We got our fish done there for 15 years and I found they do a great job on their can smoked salmon.

FAS have made my lox the last three years and last year they received a new lox slicer which cuts the slice down the fillet and not on an angle. The lox have great flavor and the slices are tender. I think they serve their lox at the Empress Hotel Dining room. I like my packages in 1/4 and 1/2 lb packages. I usually get 50+% back from the fillets I drop off that just have skin and pin bones. They do a great job on lox
