Filet knives

Do you guys ever have problems with the blade pitting ?
maybe just crappy steel, but i've had a few knives develop
a sort of serrated look from cutting through bones.
 
Never had one pitt, but I've worn the blade steel down to the point it will only hold an edge for one fish. Time to get a couple of new ones I guess.
 
Cleaning to many fish! LOL, wearing out your knifes! Sign of a good fisherman, pitted fillet knifes! LOL.
 
Do you leave it on the boat?

.... yeah crappy steel. I have cut through millions of lbs of fish and wore out many knifes... I always used Dexter Russels but the steel quality would vary from knife to knife
 
Yes..... I snagged a couple when I left the cutting joint. They are available retail too. Trotac might have them.
 
The nine dollar special from Island Outfitters has served me for two years wtih a Scotty knife sharpener. They are so soft that they take the edge niceley from the sharpener.


Probably similar.... I Grind and steel them though..... the scotty sharpeners eat knifes.
The ones I used wholesaled around 15 bux... So I imagine 20-25 retail... The 8" wide for salmon/lings, the 8" narrow for halis and the 7" narrow for trout will make showcase pieces... quickly too. ;)

The steel to keep the edge and I would have to grind every 2000lbs +/-

Wolf/holmes* prolly know the ones... White handles.... Black if you want the comfort grip... came in yellow too

West Marine has dexter russell fillet and gut knives with spoon handles. Awesome knives, my favourite by far.


The spoon ones are the dressing knifes... Not so great for filleting...
I could dress 8 sox a minute with those bad boys(with bleeding tank)..... in the day

ditto on the dexter russel...friend who's an executive chef gave me one...heres the link. http://www.dexter1818.com/Item_Details_1.asp?id=662&line=SS beats all the knives i've used. try russell food equipment on douglas they sell retail in town.

Thats the one I use for salmon... Except the pin bones I could fillet a salmon with those in about 20 seconds... Ill should make a vid for yous guys (I would explain what I was doing so it wouldn't take 20 seconds...)
 
Restaurant equipment supply places as mentioned are great for that sort of thing and Yes they'll sell you just one.
 
This is what I use.....I have 2 of them that have been given to me as gifts over the years....still yet to use the "gripper" but it has a telescoping blade from 6"-9".

I don't know I would have ever bought one ($99 a pop!) but the blade is great and telescoping feature is nice too....with a sharpening stone built into the sheath as well.
